If you do not presently use lacto fermenting canning, you should! This is one of the oldest, tastiest, easiest, most energy efficient and most healthy ways of preserving your harvest! I recommend 2 books Nourishing Traditions by Sally Fallon and Wild Fermentation by Sandor Katz.
